Amok [0000641] Ingredients: 1 lb boneless chicken, diced 1 cup coconut milk 2 tbsp gluten-free fish sauce 1 tbsp red curry paste 1 tsp turmeric 1 tbsp brown sugar 1 cup green beans, chopped Salt and pepper to taste Banana leaves for wrapping Steps: In a bowl, mix coconut milk, fish sauce, red curry paste, turmeric, and brown sugar. Add diced chicken to the mixture and marinate for 30 minutes. Cut banana leaves into squares and blanch them in hot water. Place a spoonful of the marinated chicken mixture on each banana leaf. Add chopped green beans on top and wrap the banana leaves securely. Steam the wrapped amok for 20-25 minutes until chicken is cooked. Season with salt and pepper to taste.
