Machboos [0000593] Ingredients: 1 cup basmati rice, soaked and drained 1 lb chicken, lamb, or fish, cut into pieces 1 large onion, finely chopped 2 tomatoes, chopped 2 cloves garlic, minced 1 teaspoon ground cloves 1 teaspoon ground cardamom 1 teaspoon ground cinnamon Cooking oil for sautéing Salt and pepper to taste Steps: In a pot, sauté chopped onion and minced garlic in cooking oil until golden. Add meat pieces and brown on all sides. Stir in ground cloves, cardamom, and cinnamon. Add chopped tomatoes and cook until softened. Season with salt and pepper to taste. Pour enough water to cover the meat, bring to a boil, then reduce heat. Add soaked and drained basmati rice to the pot, ensuring it's evenly distributed. Cover and simmer until the rice is cooked and the liquid is absorbed. Fluff the rice with a fork, mix gently, and let it rest for a few minutes.
