Azerbaijani Dolma [0000588] Ingredients: Grape leaves (fresh or canned) 1 cup gluten-free rice 1/2 lb ground lamb or beef 1 onion, finely chopped 1/4 cup pine nuts Fresh herbs (parsley, dill), chopped 1 lemon (juiced) Salt and pepper to taste Olive oil Steps: If using fresh grape leaves, blanch them in hot water; if using canned, rinse and drain. In a bowl, mix gluten-free rice, ground meat, chopped onion, pine nuts, chopped herbs, lemon juice, salt, and pepper. Place a grape leaf flat, add a spoonful of the mixture, and fold into a small roll. Repeat until all the mixture is used. Arrange dolma rolls in a pot, layer by layer. Drizzle olive oil over the top and add water until covered. Place a plate over dolma to keep them in place and cook on low heat for 45-60 minutes. Once rice is cooked, remove from heat and let it cool.
