In a saucepan, heat the heavy cream until it simmers; remove from heat. In a bowl, whisk together sugar and egg yolks until well combined. Slowly pour the hot cream into the egg mixture, stirring constantly. Strain the mixture to remove any lumps and divide it among ramekins. Place the ramekins in a baking dish, fill the dish with hot water halfway up the sides of the ramekins. Bake for 40-45 minutes until the edges are set but the center is slightly jiggly.
