Drain and set aside. In a small bowl, mix gluten-free soy sauce, gluten-free hoisin sauce, and sesame oil to create the sauce. Heat olive oil in a large pan or wok over medium-high heat. Add minced garlic and grated ginger, stir-frying for about 30 seconds. Add mixed vegetables to the pan and stir-fry until they are tender-crisp.
