Place the gluten-free pizza crust on a baking sheet or pizza stone. Spread an even layer of tomato sauce over the crust, leaving a border around the edges. Sprinkle shredded mozzarella cheese evenly over the tomato sauce. Create two small wells in the cheese and sauce, and carefully crack an egg into each well. Bake in the preheated oven until the crust is golden, and the eggs are cooked to your liking. While the pizza is baking, toss fresh arugula with olive oil, salt, and pepper in a bowl.
