Four Herbs Soup [0000314] Ingredients: 1 cup fresh basil leaves 1 cup fresh cilantro leaves 1 cup fresh mint leaves 1 cup fresh dill leaves 1 lb chicken thighs, bone-in and skin-on 2 cloves garlic, minced 1 tbsp gluten-free fish sauce 1 tbsp gluten-free soy sauce 8 cups gluten-free chicken broth Steps: In a pot, bring gluten-free chicken broth to a simmer. Add chicken thighs, garlic, gluten-free fish sauce, and gluten-free soy sauce. Simmer for 20-25 minutes or until the chicken is cooked through. Remove chicken from the pot, shred the meat, and discard bones and skin. Add fresh basil, cilantro, mint, and dill leaves to the pot. Return shredded chicken to the pot.
