For the Satsivi Sauce: In a blender or food processor, combine walnuts and garlic. Blend until you get a smooth paste. In a saucepan, sauté finely chopped onion in vegetable oil until translucent. Add gluten-free flour and continue to cook, stirring constantly, until the flour is golden brown. Stir in the walnut-garlic paste, ground coriander, ground fenugreek, and ground marigold (if using). Gradually add the reserved chicken broth, stirring to avoid lumps. Cook until the sauce thickens. Season with salt and pepper to taste. Assembling Satsivi: Shred the cooked chicken into bite-sized pieces. Mix the shredded chicken with the prepared satsivi sauce until well coated. Serve the Satsivi over rice or gluten-free grains. Garnish with fresh parsley. Enjoy your gluten-free Georgian Satsivi!
