Sancocho [0000134] Ingredients: 2 lbs gluten-free chicken, cut into pieces 1 lb gluten-free beef, cubed 1 lb gluten-free pork, cubed 1 large yuca (cassava), peeled and cut into chunks 2 ripe plantains, peeled and sliced 1 lb gluten-free potatoes, peeled and diced 2 ears of corn, cut into thirds 1 large carrot, sliced 1 large onion, finely chopped 3 cloves garlic, minced 1 bell pepper, diced 1 celery stalk, chopped 1/4 cup gluten-free cilantro, chopped 1/4 cup gluten-free parsley, chopped 1 tablespoon gluten-free oregano Salt and pepper to taste 2 tablespoons gluten-free vegetable oil 8 cups gluten-free chicken broth Lime wedges for serving Steps: In a large pot, heat vegetable oil over medium heat. Brown chicken, beef, and pork until seared on all sides. Add chopped onion, minced garlic, bell pepper, and celery. Sauté until vegetables are softened. Pour in chicken broth, bring to a boil, then reduce heat to simmer. Add yuca, plantains, potatoes, corn, and carrot to the pot. Cook until vegetables are tender.
