002 - fried rice


INGREDIENTS :
COOKING STEPS :
  1. the trick to cooking good fried rice is chilling the cooked white rice first - you cannot stir fry with hot or warm rice or it will stick together - put your rice in the fridge or freezer until chilled before final mix stir fry
  2. cook white rice - set aside and chill in fridge or freezer for fast chill - get it cool down
  3. cut up your veggies - cut up onions and carrots into small cubes
  4. stir fry veggies in peanut oil or olive oil until done - you can mix frozen peas in there - set aside
  5. get spice ready - mix equal parts 1 tbs of salt, pepper, sugar for basic spice mix
  6. cook meats - cut into small cubes to match veggies - stir fry till done and set aside
  7. cook 1 egg scrambled and set aside
  8. after rice is chilled mix rice, veggies, meats, eggs and stir fry them all together in oil
  9. sprinkle mixed spices (salt, pepper, sugar) onto the rice, veggie, meat, egg mix - sprinkle enough to cover each bite more or less depending on your taste
  10. add soy sauce - more or less depending on how dark you want your fried rice
  11. all done - enjoy !
