002 - fried rice
INGREDIENTS :
- rice
- meat - ham, chicken, sausage, bacon, whatever you like
- scallions - green onions or just onions
- carrots for color
- peas for color
- 1 egg
- oil for stir fry
- soy sauce
- salt, pepper, sugar spice mix
COOKING STEPS :
- the trick to cooking good fried rice is chilling the cooked white rice first - you cannot stir fry with hot or warm rice or it will stick together - put your rice in the fridge or freezer until chilled before final mix stir fry
- cook white rice - set aside and chill in fridge or freezer for fast chill - get it cool down
- cut up your veggies - cut up onions and carrots into small cubes
- stir fry veggies in peanut oil or olive oil until done - you can mix frozen peas in there - set aside
- get spice ready - mix equal parts 1 tbs of salt, pepper, sugar for basic spice mix
- cook meats - cut into small cubes to match veggies - stir fry till done and set aside
- cook 1 egg scrambled and set aside
- after rice is chilled mix rice, veggies, meats, eggs and stir fry them all together in oil
- sprinkle mixed spices (salt, pepper, sugar) onto the rice, veggie, meat, egg mix - sprinkle enough to cover each bite more or less depending on your taste
- add soy sauce - more or less depending on how dark you want your fried rice
- all done - enjoy !
