Dragon & Phoenix [0000770] Ingredients: 1/2 lb boneless chicken breast, thinly sliced 1/2 lb large shrimp, peeled and deveined 2 tablespoons gluten-free soy sauce or tamari 1 tablespoon honey 2 cloves garlic, minced 1 teaspoon ginger, grated 1 cup broccoli florets 1 cup sliced bell peppers (assorted colors) Vegetable oil for stir-frying Instructions: In a small bowl, whisk together the gluten-free soy sauce or tamari, honey, minced garlic, and grated ginger. Set this sauce aside. Heat a large skillet or wok over medium-high heat. Add a small amount of vegetable oil and swirl it around to coat the pan. Add the sliced chicken to the hot skillet and stir-fry for about 2-3 minutes until it is browned and cooked through. Remove the chicken from the skillet and set it aside. In the same skillet, add a bit more oil if needed, and then add the shrimp. Stir-fry the shrimp for about 2-3 minutes until they are opaque and lightly browned. Remove the shrimp from the skillet and set them aside. Add the broccoli and sliced bell peppers to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp. Return the cooked chicken and shrimp to the skillet with the vegetables. Pour the sauce you set aside earlier over the chicken, shrimp, and vegetables. Stir well to coat everything evenly. Continue to cook for an additional 2-3 minutes until the sauce has thickened slightly and everything is heated through.
