Lay a sheet of nori, shiny side down, on the plastic wrap. Wet your hands to prevent the rice from sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a small gap along the top edge. Lay the avocado strips, cucumber, and shrimp (or your chosen protein) in a horizontal line across the center of the rice. Carefully lift the bamboo mat with the plastic wrap, nori, and rice, then roll it over the ingredients. Apply gentle pressure to shape the sushi roll. Continue rolling until you reach the exposed edge of the nori. Moisten the edge with a bit of water, then press to seal the roll. Use a sharp, wet knife to slice the roll into bite-sized pieces.
