Gluten-Free JOC Appetizer: Samosas Ingredients: 2 cups gluten-free chickpea flour 2 tablespoons gluten-free vegetable oil 1/2 teaspoon gluten-free cumin seeds 1 cup gluten-free boiled and mashed potatoes 1/2 cup gluten-free green peas (fresh or frozen) 1/2 teaspoon gluten-free ground turmeric 1 teaspoon gluten-free ground coriander Salt and black pepper, to taste Oil for frying Instructions: In a bowl, mix the gluten-free chickpea flour with 2 tablespoons of gluten-free vegetable oil and enough water to form a smooth, pliable dough. Cover it with a damp cloth and set aside for 20-30 minutes. In a pan, heat 2 tablespoons of oil over medium heat. Add gluten-free cumin seeds and sauté until they sizzle and become fragrant. Stir in the gluten-free mashed potatoes, gluten-free green peas, gluten-free ground turmeric, gluten-free ground coriander, salt, and black pepper. Cook for 5-7 minutes until the mixture is heated through and well combined. Remove from heat and let it cool. Divide the chickpea flour dough into equal portions and roll each portion into a ball. Roll out each ball into a thin circle to form the samosa wrappers. Cut each circle in half to create semicircles. Fold each semicircle in half to form a cone, sealing the edge with a paste made from chickpea flour and water. Fill each cone with the cooled potato and pea mixture, then seal the open edge to form a triangle-shaped samosa. Heat oil for frying in a deep pan or skillet over medium-high heat. Once hot, carefully slide the samosas into the oil and fry until they are golden brown and crisp. Remove the fried samosas with a slotted spoon and place them on paper towels to drain excess oil. Serve these gluten-free JOC appetizer Samosas with your favorite chutney or dipping sauce. Enjoy your Gluten-Free JOC Appetizer: Samosas!
