Gluten-Free JOC Appetizer: Roasted Garlic and White Bean Dip Ingredients: 2 heads of garlic 1 (15-ounce) can gluten-free white beans, drained and rinsed 3 tablespoons olive oil 1 tablespoon fresh lemon juice 1 teaspoon fresh rosemary leaves (plus extra for garnish) Salt and black pepper, to taste Gluten-free crackers, vegetable sticks, or pita bread, for serving Red pepper flakes (optional, for a bit of heat) Fresh parsley leaves, for garnish (optional) Instructions: Preheat your oven to 400°F (200°C). Cut the top off each head of garlic to expose the cloves. Place the garlic heads on a sheet of aluminum foil, drizzle with a tablespoon of olive oil, and wrap them tightly in the foil. Roast the garlic in the preheated oven for about 40-45 minutes, or until the cloves are soft and golden. Squeeze the roasted garlic cloves out of their skins into a food processor. Add the drained and rinsed gluten-free white beans, fresh lemon juice, fresh rosemary leaves, salt, and black pepper to the food processor with the roasted garlic. Pulse until the mixture is smooth and well combined. Taste and adjust the seasoning, adding more salt, lemon juice, or olive oil as needed. Transfer the roasted garlic and white bean dip to a serving bowl. Drizzle with the remaining olive oil and garnish with fresh rosemary leaves and fresh parsley leaves (if desired).
