Gluten-Free JOC Appetizer: Pineapple Salsa Ingredients: 2 cups fresh pineapple, diced (or canned pineapple tidbits, drained) 1/2 cup red bell pepper, finely diced 1/4 cup red onion, finely diced 1/4 cup fresh cilantro, chopped 1 jalapeño pepper, seeded and finely chopped (adjust to taste) Juice of 1 lime 1/2 teaspoon gluten-free ground cumin Salt and black pepper to taste 1/4 teaspoon chili powder (optional, for extra heat) Instructions: In a bowl, combine the diced fresh pineapple, finely diced red bell pepper, finely diced red onion, chopped fresh cilantro, and seeded and finely chopped jalapeño pepper.
