Gluten-Free JOC Appetizer: Mango and Avocado Spring Rolls Ingredients: 8 gluten-free rice paper wrappers 1 ripe mango, peeled, pitted, and sliced into thin strips 2 ripe avocados, peeled, pitted, and sliced into thin strips 1 small cucumber, julienned 1/2 red bell pepper, thinly sliced Fresh cilantro leaves Fresh mint leaves Gluten-free hoisin sauce, for dipping Gluten-free sweet chili sauce, for dipping Instructions: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water and rotate it until it softens (about 15-20 seconds). Be careful not to over-soak; it should still be slightly firm as it will soften further as you assemble the spring roll. Place the softened rice paper wrapper on a clean, flat surface. Layer a few slices of ripe mango, avocado, julienned cucumber, and thinly sliced red bell pepper in the center of the wrapper, leaving some space on the sides. Add a few fresh cilantro leaves and mint leaves on top of the other ingredients. Fold in the sides of the rice paper wrapper, then roll it up tightly from the bottom to enclose the filling, similar to rolling a burrito. Repeat the process with the remaining rice paper wrappers and filling ingredients. Slice each Mango and Avocado Spring Roll in half diagonally, if desired.
