Swordfish Sicilian-Style [0001019] Ingredients: 4 swordfish steaks 2 tablespoons olive oil 1 medium onion, finely chopped 3 cloves garlic, minced 1 can (14 ounces) diced tomatoes 1/4 cup Kalamata olives, pitted and chopped 2 tablespoons capers 1/4 cup fresh basil, chopped Salt and black pepper to taste Instructions: Season the swordfish steaks with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the finely chopped onion and sauté until it becomes translucent, about 2-3 minutes. Stir in the minced garlic and sauté for an additional 30 seconds until fragrant. Add the diced tomatoes (including the juices) to the skillet and bring the mixture to a simmer. Stir in the Kalamata olives and capers. Continue to simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly. Carefully place the seasoned swordfish steaks into the skillet, spooning some of the tomato mixture over the top of each steak. Cover the skillet and simmer for 8-10 minutes, or until the swordfish is cooked through and flakes easily with a fork. Be sure not to overcook. Sprinkle the chopped fresh basil over the top of the swordfish and sauce in the skillet. Serve your Swordfish Sicilian-Style hot, spooning the flavorful sauce over the fish.
