Pot-Stickers [0000965] Ingredients: 1 pound ground pork or ground chicken 1 1/2 cups gluten-free dumpling or potsticker wrappers (store-bought or homemade) 2 cups cabbage, finely chopped 3 cloves garlic, minced 1 tablespoon ginger, minced 2 tablespoons gluten-free soy sauce 1 tablespoon sesame oil 1/4 cup green onions, finely chopped Cooking oil for frying Instructions: In a large mixing bowl, combine the ground pork or chicken, chopped cabbage, minced garlic, minced ginger, gluten-free soy sauce, sesame oil, and chopped green onions. Mix the filling until it's well combined. Take a gluten-free dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water. Fold the wrapper in half to create a half-moon shape, then pinch and pleat the edges to seal the potsticker. You can use a fork to crimp the edges for a decorative touch. Repeat this process with the remaining wrappers and filling until you've made all the potstickers. Heat a non-stick skillet or frying pan over medium-high heat. Add a tablespoon of cooking oil. Once the oil is hot, carefully place the potstickers in the skillet, making sure they are not touching each other. Cook the potstickers for about 2-3 minutes or until the bottoms are golden brown. Pour 1/4 cup of water into the skillet, immediately cover with a lid, and reduce the heat to medium-low. Steam the potstickers for an additional 5-7 minutes or until the wrappers are translucent and the filling is cooked through. Remove the lid and let the potstickers cook for an extra 1-2 minutes to crisp up the bottoms. Carefully remove the potstickers from the skillet and serve them hot with your favorite gluten-free dipping sauce, such as gluten-free soy sauce mixed with a bit of rice vinegar and chopped green onions.
