Lutefisk [0000909] Ingredients: 1 pound gluten-free lutefisk (make sure it's gluten-free) 4 cups water 1/4 cup salt 2 cups gluten-free white sauce (see recipe below) 2 tablespoons butter 1/4 teaspoon white pepper 1/4 teaspoon nutmeg Fresh parsley, chopped, for garnish Lingonberry sauce, for serving (optional) Instructions: In a large pot, bring 4 cups of water to a boil. Once the water is boiling, remove it from the heat and stir in the salt until it dissolves. Let the water cool completely. Submerge the gluten-free lutefisk in the saltwater solution, making sure it's fully covered. Let it soak for 5-7 days, changing the water daily to remove excess lye and salt. After the soaking period, rinse the lutefisk thoroughly under cold running water. In a large pot, bring water to a boil. Add the rinsed lutefisk to the boiling water and simmer gently for about 10-15 minutes until the fish is tender and flakes easily. While the lutefisk is cooking, prepare the gluten-free white sauce: In a saucepan, melt the butter over medium heat. Stir in the gluten-free flour to make a roux. Gradually whisk in the milk, stirring constantly until the sauce thickens. Season with white pepper and nutmeg.
