Goi Cuon [0000013] Ingredients: 8 gluten-free rice paper wrappers 1 cup cooked and shredded chicken or shrimp 1 cup rice vermicelli, cooked 1 cup fresh bean sprouts 1 large carrot, julienned 1 cucumber, julienned Fresh mint leaves Gluten-free hoisin sauce for dipping Crushed peanuts for garnish (optional) Instructions: Prepare all the ingredients and have them ready for assembly. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water, rotating to moisten both sides. Place the moistened wrapper on a clean surface. On the lower third of the wrapper, layer a small amount of shredded chicken or shrimp, rice vermicelli, bean sprouts, carrot, cucumber, and a few mint leaves. Fold the sides of the wrapper over the filling and then tightly roll from the bottom to form a neat roll. Repeat with the remaining wrappers and filling. Serve the goi cuon with gluten-free hoisin sauce for dipping. Optionally, garnish with crushed peanuts for extra flavor and texture.
