Hainanese Chicken Rice [0000011] Ingredients: 1 whole chicken (about 3-4 lbs) 2 cups gluten-free jasmine rice 4 cups gluten-free chicken broth 4 slices ginger 3 cloves garlic, minced 2 tablespoons gluten-free soy sauce 1 tablespoon sesame oil 2 stalks green onions, chopped Salt to taste Instructions: Rinse the jasmine rice under cold water until the water runs clear; drain. In a pot, combine rice, chicken broth, ginger slices, and half of the minced garlic. Bring to a boil, then reduce heat, cover, and simmer until the rice is cooked. Rub the chicken with salt and the remaining minced garlic. Place it in a pot of boiling water and cook until the chicken is done. Once the chicken is cooked, let it rest for a few minutes, then rub with gluten-free soy sauce and sesame oil. Slice the chicken and serve over the cooked rice. Garnish with chopped green onions.
