Scotch Egg [0000866] Ingredients: 4 large eggs 1 pound gluten-free sausage meat (such as pork or chicken) 1/2 cup gluten-free breadcrumbs (made from GF bread) 1/4 cup gluten-free rice flour or cornstarch Salt and black pepper to taste 1 teaspoon dried herbs (such as thyme or parsley, optional) Oil for frying (vegetable or canola oil) Boiling water and ice (for an ice bath) 1/4 cup gluten-free mustard (for serving) Instructions: Start by boiling the eggs. Place them in a saucepan, cover them with cold water, and bring the water to a boil. Once boiling, reduce the heat to a gentle simmer and cook for 6-7 minutes for a slightly soft yolk or up to 10 minutes for a firmer yolk. While the eggs are cooking, prepare a bowl with ice water. Once the eggs are cooked to your desired level, immediately transfer them to the ice bath to stop the cooking process. Let them cool for a few minutes, then peel and set them aside. In a bowl, mix the gluten-free sausage meat with salt, black pepper, and dried herbs if using. Divide the sausage meat mixture into four equal portions. Flatten each portion of sausage meat in your hand to create a patty. Take one of the boiled and peeled eggs and place it in the center of a sausage meat patty. Carefully wrap the sausage meat around the egg, ensuring it's completely covered. Repeat with the remaining eggs. In separate shallow dishes, place the gluten-free rice flour or cornstarch in one and the gluten-free breadcrumbs in another. Roll each sausage-wrapped egg in the rice flour or cornstarch to coat evenly. Dip the coated egg into a bowl of cold water, then roll it in the gluten-free breadcrumbs to coat thoroughly. Heat the oil in a deep frying pan or a deep fryer to 350°F (180°C). Carefully place the coated eggs into the hot oil and fry for about 4-5 minutes, or until they are golden brown and the sausage meat is cooked through. Remove the Scottish Scotch Eggs from the oil and place them on a plate lined with paper towels to drain any excess oil. Serve the gluten-free Scottish Scotch Eggs hot or at room temperature, with gluten-free mustard for dipping. These gluten-free Scottish Scotch Eggs are a delicious and satisfying snack or appetizer with a perfectly cooked egg inside and a crispy sausage crust on the outside. Enjoy!
