Gluten-Free JOC Soups and Stews Irish Guinness Beef Stew Ingredients: 2 pounds beef chuck, cut into 1-inch cubes 3 tablespoons olive oil 2 tablespoons gluten-free all-purpose flour 4 large carrots, sliced 1 large onion, chopped 4 cloves garlic, minced 4 cups gluten-free beef broth 1 cup Guinness stout or other gluten-free stout beer 2 tablespoons tomato paste 2 tablespoons gluten-free Worcestershire sauce 2 bay leaves 1 teaspoon dried thyme Salt and pepper to taste Chopped fresh parsley, for garnish Instructions: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Toss the beef cubes in gluten-free flour to coat, then brown them in the pot in batches. Once all the beef is browned, remove it and set it aside. In the same pot, sauté the carrots and onions until they begin to soften. Add the minced garlic and cook for another minute. Pour in the gluten-free beef broth and gluten-free Guinness, and then stir in the tomato paste and gluten-free Worcestershire sauce. Add the bay leaves and dried thyme, and season with salt and pepper. Return the beef to the pot, bring the stew to a simmer, and then reduce the heat to low. Cover and let it cook for 2 to 2 1/2 hours, or until the beef is tender. Taste and adjust the seasoning, if necessary. Serve the stew hot, garnished with chopped fresh parsley.
