Gluten-Free JOC Soups and Stews Irish Bacon and Cabbage Soup Ingredients: 6 slices bacon, chopped 1 onion, diced 4 cups chicken broth 4 cups cabbage, shredded 2 carrots, diced 2 potatoes, peeled and diced 1 bay leaf 1 teaspoon thyme Salt and pepper to taste Instructions: In a large pot, cook the chopped bacon until crispy, then remove and set aside. In the same pot, sauté onions until translucent. Add chicken broth, cabbage, carrots, potatoes, bay leaf, and thyme. Simmer for 20-25 minutes or until the vegetables are tender.
