Knead the mixture into a smooth dough. If it's too dry, add a little more water; if it's too sticky, add a touch more flour. Cover the dough and let it rest for 30 minutes. While the dough is resting, prepare the filling. In a skillet, cook the ground beef or pork over medium heat until browned. Add the chopped onion and cook until it's translucent. Stir in the chopped spinach and cook for a few more minutes until it's wilted. Remove the skillet from heat. Add the gluten-free breadcrumbs to the filling mixture and season with salt and pepper. Mix well and let it cool. Roll out the rested dough on a gluten-free floured surface to about 1/8-inch thickness. Cut the dough into 3x3-inch squares.
