Gluten-Free JOC Appetizer: Mini Vegetable Spring Rolls Ingredients: 12 gluten-free rice paper wrappers 1 cup shredded lettuce 1/2 cup thinly sliced cucumber 1/2 cup matchstick carrots 1/2 cup sliced bell peppers (mixed colors) 1/2 cup fresh cilantro leaves 1/2 cup fresh mint leaves Gluten-free soy sauce or gluten-free peanut sauce for dipping Cooked and sliced gluten-free chicken or shrimp (optional for added protein) Instructions: Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10 seconds or until it becomes pliable. Place the soaked wrapper flat on a clean surface.
